In my younger days, my food repertoire was very limited. I didn’t eat vegetables (with the exception of sweetcorn) and I especially didn’t eat fishy things. Since then, I have come a long way. I eat a much more healthy and varied diet as well as introducing new foods. The fish thing, I’m getting there… I tried king prawns a few years ago and am happy to cook them these days š
So here is a favourite recipe of mine! It’s great for midweek, and you can store and take to lunch the next day…

I always throw in a bit more chorizo as I love the flavour. There is no reason you couldn’t add other vegetables to get more of your 5-a-day.
If you add this to your menu this week, or next, leave a comment and let me know what you think!
