Sitting chatting to friends over lunch the other day we were talking about how the ‘keep fit’ side of things comes relatively easily but when it comes to food…inspiration and creativity are lacking. We end up cooking the same set of meals week in and week out.
Then, rewind a couple of weeks earlier where I’m sat in the pub with my colleagues (some of whom I met that evening) including Kaitlin, who it seems was born with creativity and inspiration when it comes to food.

So I’m handing the spoon over to Kaitlin…
My name is Kaitlin and I’ll be featuring some healthy, easy recipes on Elle’s blog once a month beginning with this first yummy post on my favourite meal of the day, breakfast! I’m passionate about eating clean, and being the best we possibly can be through healthy eating and regular exercise – I hope you enjoy my posts in the coming months!
Cinnamon and Cacao Granola with Goji Berries
This recipe is super easy! It can be made toasted or kept raw and is great because you know exactly what is going into your muesli – no sugar laden or preservatives found here!
Not only is it delicious, it’s versatile; serve with yoghurt, gifted for Christmas, with milk in the mornings, on top of your smoothies or on top of stewed fruit for a crumble like dessert. It’s also really healthy – raw cacao powder is full of antioxidants, coconut oil is great for brain function and the skin, and goji berries are nutrient packed powerhouses full of B vitamins, minerals and 4 times more antioxidants than blueberries!
What you will need:
- 1 cup of oats (use gluten free if needed)
- ½ cup pumpkin seeds
- ½ cup sesame seeds
- ½ cup almonds, roughly chopped
- ½ cup cashews, roughly chopped
- ¼ cup brazil nuts, roughly chopped
- 2 tbsp coconut oil
- 3 tbsp honey or maple syrup
- 2 tbsp vanilla extract
- 2 tbsp cacao powder
- 2 teaspoons ground cinnamon
- ½ cup goji berries
- Dried fruit, if desired
Preheat oven to 120deg. Mix all ingredients together in a bowl except the berries, using hands to coat evenly. Line 2 trays with baking paper, and spoon a single even layer.
Bake for 25-30mins, turning once. When cooler, add goji berries, and optional ingredients such as dried figs or dates and store in an airtight container.
The granola is a great gift idea in time for Christmas; simply divide between jars, cover the top with brown paper and tie over brown string, attaching a tag with your handwritten message ☺ enjoy!
