Somewhere along the lines, I lost inspiration for cooking but slowly as I regain a handle on daily life (post studies) I dug out this recipe and made it for myself. What is granola?
Granola is a common breakfast cereal which similar to muesli; granola is usually coated in some form of sugar such as honey to give it a crunchy, chunky texture. This recipe uses maple syrup which also ensures it is suitable for vegans. Common granola ingredients include oats, chopped nuts, seeds and dried fruit.
Is Granola Healthy?
Well, I can’t speak for the stuff you buy in the supermarket but this granola recipe is really healthy โ raw cacao powder is full of antioxidants, coconut oil is great for brain function and the skin, and goji berries are nutrient packed powerhouses full of B vitamins, minerals and 4 times more antioxidants than blueberries!

This recipe is super easy – it can be made toasted or kept raw and is great because you know exactly what is going into your morning meal โ no sugar laden cereals or preservatives found here!
What Ingredients Do I Need To Make This Homemade Granola Recipe?
- 1 cup of oats (use gluten free if needed)
- ยฝ cup pumpkin seeds
- ยฝ cup sesame seeds
- ยฝ cup almonds, roughly chopped
- ยฝ cup cashews, roughly chopped
- ยผ cup brazil nuts, roughly chopped
- 2 tbsp coconut oil
- 3 tbsp honey or maple syrup
- 2 tbsp vanilla extract
- 2 tbsp cacao powder
- 2 teaspoons ground cinnamon
- ยฝ cup goji berries
- Dried fruit, if desired
This recipe takes a maximum of 20 minutes to pull together all the ingredients. The nuts that I use already came chopped / smashed so that saved me having to get the blender out. Once you pop the granola in the oven you have 30 minutes to do anything else you need to around the house (go shower and do your hair if it’s the morning, or do the washing up!).
How Do I Make The Homemade Granola?
- Preheat oven to 120deg.
- Mix all ingredients together in a bowl except the berries, using hands to coat evenly.
- Line 2 trays with baking paper and spoon a single even layer of the granola mixture onto each tray.
- Bake for 25-30mins, turning once half way through.
- Once cooked, leave to cool before adding goji berries and optional dried fruit
- Store in an airtight container

How To Eat Your Granola
