I know January is nearly over, and Veganuary is coming to an end but some of us (maybe me) didn’t get the chance to make as much effort food wise this month as we wanted. Also, veganism isn’t just for January. So, I put together this short list of the best vegetarian cookbooks around right now. They won’t break the bank and they all feature quick vegetarian and vegan recipes.
Best Vegetarian Cookbooks for 2020
Leon Fast Vegan
I cam across this book months ago when I popped into Leon for some food and decided to try their new Caribbean Plantain Curry. I saw that the inspiration came from the recipe in their Fast Vegan cookbook and it immediately got added to my wishlist.
The book contains more than 150 delicious plant-based recipes inspired by dishes from around the world, from Mexican Tacos to Vietnamese pancakes. It’s conveniently divided up into mains, sides and desserts.
The Green Roasting Tin
This one is new to me but came recommenced in my Ocado magazine. The Green Roasting Tin is packed with seventy-five easy and delicious one-tin recipes; half vegan, half vegetarian, all delicious.
Patricia, of Girl on the River, tells me that “The Green Roasting Tin has been an absolute game-changer. It’s rare for a cookery book to inspire real changes to your habits, but this one has. Who knew you could cook rice, pearl barley and even polenta in a roasting tin? Genius! The recipes are imaginative and fun and delicious and I use this book all the time. Fab.”
Joe Wicks, Veggie Lean in 15, Meals & Workouts
Now, I was a massive fan of Joe Wicks and his Lean in 15 brand – you can read my review of his first book here. The feedback on his books was always about how few recipes were vegan or vegetarian and at an event when he was asked about this he did say that he ate meat himself so that is what he featured.
I think he did hint back then that he would be releasing a vegetarian cookbook and here it is. For the price point – less than you probably spend on lunch – you can’t really go wrong.
The Veggie Lean in 15 cookbook contains 100 quick-to-prepare veggie meals, including vegan options, plus three exclusive High Intensity Interval Training home workouts.
I’m pretty sure I’m gonna get the Leon cookbook really soon so will drop a review on the blog once I’ve tried it out fully. If you have any of these already, leave a comment and let us know what you think about it!

I have also found it quite difficult to make as much effort with my diet this month as I would’ve liked – life just gets so busy, but I definitely think having a good cookbook helps when lacking inspiration. I’ve always wanted to get one of Joe Wicks’ books and now Leon’s book might be on my list too! Thanks for sharing your top 3.

I’ll keep these in mind! I’ve been utilizing my library more and more and one of the ideas I’ve been toying with is taking a cookbook out each visit (about 2x month) and trying at least one recipe.

I haven’t been to the library in so long… had no idea they would have cookbooks! What a great idea!
