Coconut and Lemon Bliss Balls Recipe

Tell me, do you suffer from that dreaded 11am or 3pm slump? It’s tempting to grab a coffee, or head towards the vending machine or office biscuit selection, but worry not because I’ve got your back. By making these tasty coconut and lemon bliss balls, the balance between carbs, fat and protein will give you the much needed boost until dinner or lunch time.

Most of us are running around trying to pack everything into hectic schedules, so you can rejoice as these take less than 10 minutes to make. They can be frozen or stored in the fridge for up to 5 days and another bonus is the fact they require standard kitchen cupboard ingredients. When it comes to protein powder, I tend to find that a vegan option suits me better, if protein powder isn’t part of your lifestyle just swap for more oats.

Ingredients for your Bliss Balls

*Makes 8 generous sized balls

100g Dates

4 Tablespoons lemon juice

15 Desiccated coconut (plus more for rolling)

25g Oats

10g Honey / Agave Nectar

10g Melted Coconut Oil

20g Protein Powder

How to make your bliss balls

Start by placing your dates, lemon juice, honey and coconut oil in a *food processor and blend until a smooth mix forms. Then add in the coconut, oats and protein powder, continue processing until you have a firm dough.

Spoon out the mix and place in a bowl to be refrigerated for 30 minutes, then using a teaspoon, scoop the mix and roll into balls. Finally, roll the balls in coconut, these will be ready to be eaten right away or saved for later.

*Notes: If you don’t have a food processor, a nutribullet or similar will work perfectly! Also this works best with sticky dates, if needs be soak them in hot water beforehand to soften them up.
